  • Struck Matchstick: A term used to describe a subtle, smokey aroma often found in wines aged on lees (the dead yeast cells) or due to a slight reduction during winemaking.
  • Oak Reduction: When a wine is aged in oak barrels, it can take on flavours like toasty, nutty, or vanilla notes. Reduction refers to the process where the wine is kept in contact with oxygen, giving it those rich characteristics.
