We’re not allowed to tell you who made it (cleanskin rules), but let’s just say this comes from a Halliday-rated WA producer known for small batch, minimal intervention wines. It is their single vineyard Fiano from Mount Barker, bottled under its original screw cap but sold label-free, so you get the full wine at a fraction of the price. Hand crafted, unfined, unfiltered, and properly interesting in the glass.

Tasting Notes 🍋

Style: Dry, textural, new-wave white.

Aromatics
Lime, green apple and subtle citrus blossom with a gentle savoury edge. As it opens, you’ll find hints of almond, wet stone and a subtle sea spray character.

Palate
Bright, mouth watering acidity wrapped in a soft, gently creamy texture. Lime and green apple drive the flavour, with a lightly salty finish that makes it incredibly food friendly. The unfiltered style adds weight and a fine, leesy grip without heaviness.

Finish
Dry, zesty and refreshing with citrus and saline notes lingering on a long, moreish finish.

Minimal Intervention & Small Batch 🌱

This is very much a “what you see is what you get” winemaker’s Fiano:

  • No fining

  • No filtration

  • Vegan friendly

  • Sustainable farming from an integrated vineyard that uses sheep grazing and organic matter to build soil health

Because it is unfined and unfiltered, it can appear slightly cloudy and may throw a harmless sediment. That is part of the style and a big part of the texture and flavour.

If you like more texture, gently invert the bottle a few times before opening to mix the lees back through the wine. If you prefer it a touch cleaner, stand it upright in the fridge for a day and pour carefully.

Viticulture & Winemaking 🍇

  • Region: Mount Barker, Great Southern, WA

  • Variety: 100% Fiano

  • Fruit source: Single vineyard, planted 2015

  • Harvest: Picked at flavour ripeness with natural acidity retained

In the winery

  • Fruit crushed and destemmed

  • Fermented with selected yeast

  • 85% fermented and matured in stainless steel

  • 15% fermented and matured in older French oak

  • 4 months on lees in tank, then 2 months in neutral oak with lees incorporated

  • Bottled unfined and unfiltered, so a natural cloudiness and gentle lees texture remain

  • Alcohol: 12.5%

  • pH: 3.17

  • TA: 6.8 g/L

  • Residual sugar: 1 g/L (dry)

  • Production: 330 dozen (proper small batch)

Serving & Cellaring ❄️

  • Serving temperature: 8–10 °C

  • Best drinking: Now to around 2027

  • Style: Made to be enjoyed fresh and vibrant, but the variety and lees work will let it add a little extra savoury complexity over a few years in bottle
