Tasting Notes

The 2022 ‘G5’ Single Vineyard Cabernet Sauvignon presents a deep red colour with purple hues, signalling its richness and intensity. The nose is captivating, with aromas of redcurrant, cassis, and wild berries, harmoniously blending with the distinctive notes of cedary oak and bay leaf, offering a complex and inviting bouquet.

On the palate, the wine is incredibly long and persistent, with flavours of blackcurrant, red earth, and moss leading the way. A touch of saline freshness and a savoury edge further enhance the depth of the wine, making each sip an exploration of evolving complexity. The fine tannins and vibrant acidity provide structure and balance, ensuring this wine has both immediate appeal and excellent ageing potential.

Vineyard and Winemaking Process

Sourced from Gunyulgup Block 5 Vineyard, Yallingup Hills: The fruit for this single vineyard Cabernet Sauvignon comes from the Gunyulgup Block 5 Vineyard in the far north of Margaret River’s Yallingup Hills subregion. The vineyard is home to old vines planted on deep gravel loams, with an east-facing slope that captures the morning sun, resulting in exceptional balance and intensity in the wine.

Vintage Overview:
The 2022 vintage in Margaret River was outstanding, with a wet spring and late flowering setting the stage for a warm and dry growing season. This combination of conditions produced wines with refined flavours, elegance, and great personality.

Winemaking Details:
The fruit was fermented solely in static fermenters, with pump-overs and delestage techniques used to extract fine tannin and colour for up to 10 days. Primary fermentation was completed in tank before the wine was racked into a selection of new and older French oak barriques for malolactic fermentation and aged for 18 months. This careful approach to winemaking highlights the unique character of the vineyard and the potential of the vintage.

Wine & Food Pairing Recommendations

  • Main Courses: Butterflied lamb leg coated in chermoula, barbequed and served with freshly warmed pita, feta, and rocket. The wine’s savoury complexity complements the rich, spiced lamb perfectly.
  • Cheese Pairings: Aged cheddar, comté, or a rich blue cheese.
  • Side Dishes: Roasted root vegetables or grilled mushrooms. The earthy notes of the wine pair wonderfully with the natural flavours of roasted vegetables.

Serving Temperature Tips

Serve this wine at 16–18°C to allow its complex aromas and flavours to fully unfold. This temperature will also enable the tannins to soften and integrate beautifully with the food.

Technical Terms Explained:

  • Tannins: Natural compounds found in grape skins that provide structure and a dry sensation in the mouth. Fine-grained tannins, like those in this wine, add a smooth, balanced mouthfeel.
  • Delestage: A winemaking technique where the fermented grape juice is separated from the skins to increase tannin extraction and improve the texture of the wine.
  • Barriques: Small oak barrels (225 litres) used to age the wine, contributing flavour and complexity to the wine. New barriques impart a stronger oak influence, while older barrels offer a more subtle effect.
  • Malolactic Fermentation: A secondary fermentation process that converts malic acid into lactic acid, softening the wine’s acidity and creating a creamier texture.
