Juicy ~ Pure ~ Preservative Free

Born from a bold idea back in 1987, Happs were pioneers of preservative free wines long before it was fashionable. This 2021 Preservative Free Red continues that legacy, delivering a vibrant, medium to full bodied red with no added sulphur dioxide and loads of flavour. It is pure, expressive and made for relaxed drinking, especially served slightly chilled as a great summer red. Think dark cherries, blackcurrant and raspberries, wrapped in velvety tannins with a long, mouth watering finish.

Why You Will Love It ❤️

  • Preservative free – no added sulphur dioxide

  • Juicy, fruit driven blend of Merlot, Shiraz and Cabernet

  • Medium to full bodied with velvety tannins and plenty of flavour

Tasting Notes 🍇

Aroma
Lifted floral notes over black and blue fruits. Liquorice, choc mint, plum, graphite and gentle spice all weave through the nose, giving both fruit sweetness and savoury complexity.

Palate
Medium to full bodied with good structure. Dark cherry, blackcurrant, ripe raspberry and plum sit at the core. Hints of cola, rum and raisin, dark chocolate, coffee and dried herbs add layers. The tannins are velvety and supportive, making the wine feel plush rather than heavy.

Finish
Long and mouth watering, with dark fruits, chocolate and spice lingering pleasantly.

Varieties and Style

  • 47% Merlot

  • 38% Shiraz

  • 15% Cabernet Sauvignon

A classic Margaret River red blend reimagined as a preservative free style. Merlot brings plushness and red fruits, Shiraz adds spice and generosity, while Cabernet contributes structure and blackcurrant depth.

Winemaker’s Notes 🍷

Happs first released a preservative free wine in 1987, proving that careful vineyard work and modern hygiene in the winery could replace the need for added sulphur. The 2021 Preservative Free Red follows that philosophy. It is crafted to be:

  • Pure and expressive, with nothing masking the fruit

  • Complex and full flavoured despite having no added preservatives

  • Structurally sound so it can hold its condition in bottle for several years

Wine details

  • Preservatives: None added

  • Cellaring: Drinks well now, will hold for around five years in bottle

  • Best served: At cellar temperature, around 16 to 18 °C

Analysis

  • Alcohol: 14.1%

  • Titratable acidity: 6.2 g per litre

  • pH: 3.67

  • Residual sugar: less than 0.5 g per litre

Why Choose Preservative Free? 🌿

  • No sulphur dioxide added, ideal for those who prefer minimal intervention wines

  • Lets the pure fruit and blend speak clearly in the glass

  • Backed by decades of Happs experience working with preservative free styles

  • Proven ability to age for several years when stored correctly

Food Pairing Suggestions 🍽️

  • BBQ lamb chops or sausages

  • Chargrilled chicken skewers with herbs

  • Gourmet burgers with caramelised onion

  • Wood fired pizza with pepperoni or mushrooms

  • Hard cheeses and savoury snacks for an easy grazing platter

FAQ 🧐

Do preservative free reds need to be drunk immediately?
Not straight away. This wine is designed to drink well on release, but it has the structure and acidity to hold for about five years in bottle if stored in a cool, dark place.

Should I serve it chilled?
For summer drinking, serving it slightly chilled works brilliantly. Aim for 14 to 16 °C, which keeps it refreshing but still lets the flavours and tannins show.

Will it taste different from a regular Margaret River blend?
You will notice a very pure, fruit driven profile with no sulphur lift on the nose. It still has all the dark fruit, spice and structure you expect, just in a cleaner, more unadorned way.

A generous, fruit packed, preservative free Margaret River red that is perfect for easy drinking, especially when the weather warms up. 🍷🌞
