Winemaking Process

The fruit was harvested at optimal ripeness to retain natural acidity. After gentle pressing, 85% of the juice was fermented in stainless steel, while 15% underwent fermentation in French oak barrels. The wine was left on lees for four months to enhance texture and complexity before a rough racking. The barrel portion was blended back, incorporating its lees to add depth. The wine was neither fined nor filtered, preserving its natural character.
