The Vinaceous Salome Tempranillo Rosé 2022 is a contemporary Australian rosé that moves away from the sweet, confectionery styles of the past decade. Drawing inspiration from Southern European wines, it offers a lighter colour and a focus on savoury, textural elements rather than residual sugar. Tempranillo, the grape of choice for this rosé, provides attractive fruit aromas of Watermlon and red apple.

  • Harvesting: The Tempranillo grapes are machine harvested from vines planted in 2000.

  • Crushing/Destemming: Grapes are crushed and destemmed to prepare for fermentation.

  • Fermentation: Utilises inoculated yeast, with fermentation occurring entirely in stainless steel to preserve fresh fruit flavours.

  • Blending: A small addition of 3.5% Shiraz rosé is blended post-fermentation to enhance complexity.

  • Lees Contact: The wine spends three months on lees, contributing to its texture and depth.

The 2022 vintage presented favourable conditions, resulting in Tempranillo grapes with well-developed varietal flavours and balanced acidity. This has led to a rosé with a good tannin profile, well-developed varietal flavour, and intense colour.
