Bindoon Estate

Pedro Ximenes Liqueur 2013

Bindoon Estate Pedro Liqueur

Rich | Rare | Indulgent

Pedro Ximénez is a true rarity in Western Australia, with very few plantings across the state. Traditionally associated with Spain’s famed sherry regions, this unique 2013 Liqueur Pedro from Bindoon Estate showcases the variety’s signature intense sweetness, complex fruit flavours, and velvety richness, all while embracing a distinctly local expression.

Rare in Western Australia – Pedro Ximénez is seldom grown here, making this a unique find.
Rich and indulgent – a luxurious, full-flavoured liqueur wine.
Versatile enjoyment – sip it neat, serve it chilled over crushed ice with lemon, or use it in creative cocktails.
Perfect for dessert pairings – complements dark chocolate, dried fruits, and caramel-based sweets.
Age-worthy – its complex, fortified nature means it can continue to evolve over time.

Organic notes: Bindoon Estate is certified organic, however, the winemaker also processes non organic vineyard fruits so the winery does not promote that it’s a finished organic wine. Minimal preservative 220 is added (sulphite)

Organic Certification # 10952 (ACO)

How to Enjoy It 🍷

  • As an after dinner, coffee or dessert wine
  • As the base of a mixer with soda water and a twist of lemon
  • In a trifle, it matches peaches, nectarines, apricots very well
  • Pour it over ice cream (but don’t drive afterwards).

Tasting Notes

  • Aroma: A lively bouquet of ripe figs, dates, and caramel, with a touch of citrus zest.
  • Palate: Lush and mouth-coating, with flavours of raisined fruit, toffee, and subtle spice, balanced by a lingering sweetness. Hints of light port characters add depth.
  • Finish: Smooth and warming, with a gently nutty aftertaste.

With very few Pedro Ximénez plantings in Western Australia, this Bindoon Estate Liqueur Pedro 2013 is a rare and special drop. Whether enjoyed neat, over ice, or paired with a rich dessert, it’s a delightfully indulgent way to end an evening.

About Bindoon Estate Winery

The Bindoon Estate vineyards are situated to the north of Bindoon, encompassing ten acres of land. Certified organic by ACO, the vineyard boasts a rich history with vines planted in the early 1970s and 1980s. The estate grows a selection of grape varieties including Chardonnay, Shiraz, Merlot, and Cabernet.

In 2005, we made the decision to cease irrigation for our red grape varieties, aiming to enhance the local regional character, flavour, and overall quality of our wines. This shift allowed the vines to develop deeper roots, contributing to a more robust and distinctive flavour profile.

By 2008, we introduced a foliage spray program using liquid kelp, which strengthened the skin of the foliage and fruit. This innovation provided better protection against sun, wind burn, disease, desiccation, and frost damage, while also offering the benefits of leaf and ground-absorbed fertilisers. To conserve moisture, we opted for ploughing the vineyard instead of mulching.

In 2012, we implemented a new strategy to further preserve the improved flavour and quality of our grapes by rolling out home-grown organic meadow hay between the vine rows. This method helped to conserve ground moisture and reduce ground temperature, stabilising the vineyard’s production levels.

Today, Bindoon Estate produces a range of wines, including Shiraz, Merlot Shiraz, Chardonnay, Blush Rosé, Liqueur Shiraz (port), and Liqueur Pedro (sweet sherry). The grapes for the Blush Rosé and Liqueur Pedro are sourced from nearby, ensuring a diverse and high-quality selection.
