The Deep Woods Estate Chardonnay 2025 is a modern Margaret River classic built around the region’s signature Gin Gin clone, with fruit selected from both northern and southern sites for balance and shape. It’s bright and generous without feeling heavy, with ripe stone fruit and grapefruit up front, then a lovely preserved lemon thread that carries through the palate. What really sets it apart is the coastal tension, a salty sea-breeze character that keeps the wine fresh, clean and moreish.

In the cellar, this Chardonnay is made with a light touch. Wild fermentation using indigenous yeasts brings subtle complexity, while a mix of seasoned and new oak adds texture rather than overt oakiness. With minimal fining and no acid additions, the style stays true to site and vintage. Tasting Notes

Colour: Pale straw.
Aroma: Ripe stone fruit, grapefruit, and subtle honey and biscuit notes.
Palate: Generous preserved lemon characters balanced by a saline sea-breeze tension from coastal vineyards.
Cellaring: Enjoy on release, with further complexity over 3 to 4 years from vintage.

Viticulture & Winemaking

Region: Margaret River, Western Australia
Variety: Chardonnay
Vintage notes: Adequate winter rainfall in 2024 replenished dams and soil moisture. Spring stayed moderate with healthy canopies and little disease pressure. Summer was dry and warm through white harvest. Netting took extra work due to a lack of regional marri blossom, so bird control was a bigger focus. The 2025 vintage again shows Margaret River’s consistency with balanced wines, seamless natural acidity and excellent fruit expression.
Winemaking: Fruit selected from northern and southern vineyards. Fermented in a combination of seasoned and new oak barrels using indigenous yeasts for wild fermentation. Minimal fining and no acid additions.
