Tasting Notes:

The 2021 Deep Woods Estate Rosé showcases a delicate pale salmon pink colour, with expressive and floral aromas that draw you in. Fresh wild strawberries lead the nose, while subtle hints of herbs and florals add layers of complexity.

On the palate, wild strawberries take the spotlight, paired with a creamy, smooth texture that enhances its drinkability. The addition of barrel-fermented Vermentino adds just the right amount of texture and complexity, balancing the fruit’s natural brightness. The lively acidity and dry finish ensure the wine is as refreshing as it is flavourful.

Vineyard & Winemaking Details:

The fruit for this rosé was sourced from vineyards in the Yallingup Hills of Margaret River, including Tempranillo and Shiraz, known for their ability to produce expressive, flavourful wines. A slow, carefully managed fermentation process allowed the wine to retain its delicate character while achieving full-flavour and balance. The small portion of hand-picked Vermentino was barrel-fermented to add richness and texture, creating a truly exceptional rosé.

Food Pairings:

  • Grilled seafood, such as prawns or scallops
  • Fresh salads with goat cheese or citrus dressing
  • Light pasta dishes with a herby dressing
  • Ideal as an aperitif or paired with tapas-style dishes

Technical Details:

  • Region: Margaret River, Western Australia
  • Varieties: Tempranillo, Shiraz, Vermentino
  • Alcohol: 13.0%
  • pH: 3.34
  • Acidity (TA): 6.35 g/L

Reviews:

94 Points. Erin Larkin, Halliday Wine Companion

“Expansive, full of flavour and textural, this is yet another exciting release of the estate rosé. Red apples, raspberry, lemony acidity and oodles of exotic market spices. Finer and more precise than the 2020 release, in line with the cool year that birthed it.”
