Fraser Gallop Parterre SSB

Refined ~ Textural ~ Age-Worthy

A sophisticated take on the classic Semillon Sauvignon Blanc (SSB) blend, this barrel-matured wine offers exceptional depth, texture, and elegance—more akin to a fine Chardonnay than a typical stainless-steel-fermented SSB.

Why You’ll Love It ❤️

  • Elevated Complexity: A sophisticated take on the Semillon Sauvignon Blanc blend with added depth from barrel fermentation.
  • Versatile Pairing: Ideal with seafood, fresh salads, or dishes with citrus-based dressings.
  • Textural Finish: A creamy, vanilla-tinged finish that softens the acidity and adds richness.
  • Refreshing and Vibrant: Bursting with citrus, passionfruit, and a hint of fennel for a truly refreshing taste experience.

Halliday Review 🏆

95 Points

Even if this appeals in its youth, such an oak-aged style (new and used French oak of various sizes) generally needs time to settle and chill out. And this will follow such a route. In the meantime, it’s fragrant with finger lime and snow peas with a snip of fresh herbs and lots of nutty, toasty oak. There’s also a waxy/lanolin character and no shortage of acidity to keep this alive for another decade or so.

Tasting Notes 🍋

  • Colour: Pale straw with lime-green hues.
  • Aromas: Guava, papaya, rockmelon, custard apple, and ripe limes, with a hint of fresh herbs.
  • Palate: Bright lemon-lime citrus, subtle lemongrass, and a creamy vanilla texture from oak maturation. The acidity is softened by a long, chalky, mouthcoating finish, making it both fresh and salivating.

Winemaking Process

  • Hand-Harvested – Picked in the cool hours of the morning for maximum freshness. Chilled to 8ºC overnight before whole-bunch pressing to enhance purity.
  • Barrel Fermentation & Maturation – 10 months in a mix of new & old French barriques, puncheons, and cigar barrels, adding layers of texture and complexity.

Serving Tips ❄️

  • Best Temperature: Serve at 8–10°C for the perfect balance of freshness and texture.
  • Chilling Guide:
    • From room temp: Refrigerate for 90 minutes or ice bucket for 30 minutes.
    • Too cold? Let sit for 10 minutes before pouring to reveal aromatics.
  • Glassware: A Chardonnay or Bordeaux white wine glass enhances the wine’s layered complexity.

Food Pairing Suggestions 🍽️

  • Grilled Lobster with Lemon Butter – The creamy oak texture complements the richness of the lobster.
  • Herb-Crusted Chicken – The citrusy, herbal notes in the wine mirror the dish’s flavours.
  • Fresh Goat Cheese & Fig Salad – A perfect balance of acidity and creaminess.
  • Seared Scallops with Caper & Lime Sauce – Enhances the wine’s freshness and minerality.

FAQ Wine Terms 🤔

What are cigar barrels?
Cigar barrels are long, narrow oak barrels that increase lees contact, enhancing texture while preserving freshness.

How does barrel fermentation change SSB?
Unlike traditional stainless-steel-fermented SSB, barrel fermentation adds texture, complexity, and depth, making the wine more age-worthy.
