Juniper Shiraz
The 2019 vintage enjoyed cooler weather and a later harvest, allowing the grapes to ripen gradually and reach perfect maturity by late April. Despite facing challenges like high bird pressure and reduced yields, the quality of the grapes was exceptional, resulting in wines of beautiful finesse.
This wine is crafted from 95.8% hand-picked fruit from our 1973 plantings on the original estate, harvested between 4th and 11th April at 13.9°-14.4°Bé. The remaining 4.2% comes from the aromatic PT15 clone at our Karridale vineyard, picked on 3rd April at 13.3°Bé. Both vineyards are managed sustainably and adhere to organic practices.
In the winery, we used open fermenters with a mix of indigenous and cultured yeasts. The blend included 5% whole bunches and fermented on skins for up to eight days. The wine then aged for nine months in large-format French barrels (puncheons and hogsheads), with just 10% new oak, and underwent malolactic fermentation. Bottled in January 2021, this vegan-friendly wine is smooth, well-balanced, and elegantly expressive.
This Margaret River Shiraz radiates with a deep red hue and captivates with its rich aromas of black cherries, damsons, and charcuterie, accented by a hint of dried herbs. On the palate, it delivers a refreshing and precise experience, showcasing ripe dark fruits, spiced plum, and licorice, with nuanced savoury notes of aniseed and white pepper. True to the region’s style, the oak influence is understated, allowing the wine’s fine, silky tannins and vibrant acidity to shine through. This Shiraz reflects the hallmark elegance and balance of Margaret River, culminating in a beautifully long and sophisticated finish. Its refined character and spicy complexity make it an ideal match for Osso Bucco.
