The Mandoon Estate 2022 Sparkling is crafted from handpicked Semillon, selected when the sugars are low and the natural acidity is high, ensuring a fresh and vibrant base wine. The fruit is whole bunch pressed, and the traditional method of sparkling wine production is used, followed by 12 months of bottle maturation to enhance complexity.
On the nose, this sparkling wine is filled with crisp aromas of Granny Smith apple, green pear, white peach, and guava. The 12 months of maturation on yeast lees has created additional complexity, with notes of brioche, meringue, and subtle biscotti-like tones, adding depth and richness.
The palate is refined and generous, with lively flavours of apple, white peach, and zesty citrus, complemented by ripe tropical fruit undertones. The bottle maturation has imparted a creamy texture and soft roundness to the wine, while the limey acidity balances the flavours, leading to a lively and flavoursome finish.
