A Mature Great Southern Shiraz

Great Southern Shiraz is known for combining generous fruit with the pepper, spice and freshness associated with a cooler wine region.

The 2020 growing season was warm and dry, allowing the fruit to reach excellent ripeness and concentration. Importantly, the finished wine still retains the regional spice, balance and elegance that distinguish Great Southern Shiraz from heavier warm-climate examples.

Several years of bottle age have brought the fruit, oak and tannins together. The wine remains generous and expressive, but it now has a smoother texture and more settled savoury complexity than it would have shown immediately after release.

For anyone who enjoys Shiraz with flavour and richness but does not want an excessively sweet, jammy or heavy style, this is an excellent choice.

Viticulture and Winemaking

The Shiraz fruit was carefully sorted before fermentation, with many berries retained whole to help preserve freshness and aromatic fruit character.

Fermentation began gradually before gentle extraction was used to build colour and flavour without drawing harsh tannins from the skins. The fermenting wine was worked regularly, but temperatures were kept controlled to maintain balance.

After fermentation, the wine was gently pressed and transferred into French oak. Malolactic fermentation and barrel maturation helped soften the wine and bring the grape and oak tannins together.

The wine remained in French oak for 16 months before final preparation and bottling.

The extended oak maturation contributes chocolate, mocha and spice, but the central character remains ripe plum, mulberry and peppery Great Southern Shiraz fruit.

Serving and Cellaring

Serve this Mystery Shiraz at approximately 16 to 18°C.

Australian room temperature can often be warmer than ideal. If the bottle has been stored at around 22 to 24°C, place it in the refrigerator for approximately 30 to 45 minutes before serving.

Give the wine around 30 to 45 minutes in a decanter or open bottle. This will help the plum, mulberry, pepper, mocha and spice become more expressive.

The wine is already showing the benefits of bottle age and is ready to enjoy. It can be kept for a little longer under suitable storage conditions, but there is no need to wait.

• Slow-cooked beef: Beef cheeks, short ribs or a rich beef casserole complement the wine’s concentrated fruit and rounded tannins.
• Steak with pepper sauce: The pepper and spice in the wine work naturally with chargrilled beef.

What does the wine taste like?

Expect plum, mulberry, sweet red fruit, pepper and savoury spice, with chocolate and mocha from its time in French oak.

The palate is concentrated and richly flavoured, but smooth tannins and good balance prevent it from feeling excessively heavy.

Is it ready to drink?

Yes. The 2020 vintage has already had time to develop and soften in bottle.

It can be opened now, although approximately 30 to 45 minutes of air will help the fruit, spice and oak characters become more expressive.
