Ray Jordan Wine Review

Crazy, crazy, that a cabernet with this much style and personality should be selling for this price. But, it is. The blackcurrant and plummy combination opens on the nose and swells into the palate. It’s so smooth and velvety yet there is ample structural tannin and crisp acid to control and direct the finish.

Tasting Notes 🍷

  • Appearance: Ruby red hue, reflecting its youthful vibrancy.

  • Aroma: Aromas of blackcurrant and plum, with hints of bay leaf and herbaceous nuances.

  • Palate: Medium-bodied with smooth, chalky tannins; flavours of bright red and blue fruits leading to a structured finish.

Serving & Cellaring Guidelines

  • Serving Temperature: 16 to 18°C – To achieve this, if stored at room temperature (22°C), place the bottle in the refrigerator for approximately 30 minutes before serving.

  • Decanting: Being a young Cabernet, allowing the wine to breathe for 60-90 minutes can enhance its aromatic and flavour profile.

  • Cellaring Potential: Enjoy now or cellar for up to 4 years to develop further complexity.

Food Pairing Suggestions

  • Grilled Lamb Chops – The wine’s structure complements the rich flavours of lamb.

  • Roasted Vegetables – Enhances the natural sweetness and depth of roasted root vegetables.

  • Aged Cheddar Cheese – The wine’s acidity and tannins balance the sharpness of aged cheddar.

Additional Information ℹ️

  • Region: Western Australia, predominantly Blackwood Valley.

  • Alcohol: 14% ABV.

  • Closure: Screwcap.

FAQ Wine Terms 🤔

  • What is the ideal serving temperature for Cabernet Sauvignon?

Full-bodied red wines like Cabernet Sauvignon are best served slightly below room temperature, between 15–18°C. This temperature range enhances the wine’s flavours and structure.

  • How can I achieve the correct serving temperature if my wine is stored at room temperature (22°C)?

Place the bottle in the refrigerator for approximately 60 minutes to bring it down to the ideal serving temperature.

  • What does ‘cellaring potential’ mean?

Cellaring potential refers to the length of time a wine can be stored under proper conditions to develop additional complexity and character.

  • Why is decanting recommended for some wines?

Decanting allows the wine to aerate, which can enhance its aromatic profile and soften tannins, improving the overall tasting experience.

  • What are tannins?

Tannins are natural compounds found in grape skins, seeds, and stems, as well as in oak barrels. They contribute to the wine’s structure and mouthfeel, often providing a drying sensation on the palate.

  • What does ‘herbaceous’ mean in wine tasting?

Herbaceous refers to aromas and flavours reminiscent of herbs or green vegetation, often found in wines like Cabernet Sauvignon.

  • What is the significance of a screwcap closure?

Screwcap closures provide a tight seal, reducing the risk of cork taint and preserving the wine’s freshness and quality over time.

  • What does a 91-point rating signify?

A 91-point rating indicates an excellent wine of superior quality and character, as evaluated by a wine critic or publication.

  • What foods pair well with this Cabernet Sauvignon?
