Winemaker’s Note

The Signature Series Riesling is crafted to express both variety and region with clarity. Parcels from Great Southern’s key subregions are handled gently, using only free run juice and a neutral yeast strain, to capture pristine citrus flavour and a fine, chalky acid profile. Oak is avoided entirely to keep the style crisp, dry and focused.

    • Parcels from Frankland River, Porongurup and Mount Barker. 

  • Variety: 100 percent Riesling

  • Harvest: Picked in the cool of the morning to retain natural acidity and aromatics. 

  • Juice: Free run only, for finesse and delicacy. 


    Fermentation:

    • Cool fermentation in stainless steel

    • Neutral yeast to preserve purity and citrus driven fruit

  • Maturation: Short time on lees in tank before early bottling to lock in freshness.

Is it dry or off dry?
It is a crisp, dry style with bright acidity and citrus fruit, so it feels refreshing rather than sweet. 

How does it compare to Clare or Eden Valley Riesling?
Great Southern Riesling tends to sit closer to a classic lime and lemon profile, with a slightly softer, talc like texture and a subtle saline, mineral edge, rather than the sometimes more piercing line of some South Australian styles. 

Do I need to decant it?
Not essential, but pouring it into a jug or carafe and giving it a few minutes in the glass will help the citrus and floral notes to open up.
