Fresh | Fruit Forward | Aromatic

The Singlefile Great Southern Chardonnay of 2025 is a beautifully expressive Great Southern Chardonnay that captures the brighter, more fruit-forward side of the Singlefile range. Chardonnay is especially well suited to the cool-climate conditions of Western Australia’s Great Southern, where the vineyards ripen slowly and evenly, building flavour intensity while retaining the natural acidity that gives the wines their freshness and poise. The result here is a modern Chardonnay that feels generous and mouth-filling, yet still polished, vibrant and finely balanced.

Bright aromas of lemon curd and ripe peach lead the way, followed by subtle mealy notes and a gentle struck match complexity that adds extra interest. On the palate, zesty citrus and stone fruit are supported by a touch of spice from oak maturation, creating a wine with both freshness and texture. Aged in a mix of 25% new and 75% one-year-old Burgundian oak, it remains fruit-driven while gaining depth, shape and a long, elegant finish.

Why You Will Love It

  • Bright Aromatics: Lemon curd, ripe peach, subtle mealiness and a hint of struck match create an expressive and modern Chardonnay nose.
  • Fruit-Forward Style: A generous core of citrus and stone fruit makes this one of the more approachable and vibrant Chardonnays in the Singlefile range.
  • Balanced Oak Influence: Burgundian oak adds spice, depth and structure without overwhelming the freshness of the fruit.
  • Elegant Yet Mouth-Filling: Richness and natural acidity work together to give the wine both texture and lift.
  • Cellaring Potential: Delicious now, but structured to develop gracefully over the next three to five years.

Tasting Notes

  • Colour: Brilliant pale gold, reflecting the wine’s fresh, vibrant profile.
  • Aromatics: Inviting aromas of lemon curd and ripe peach, with subtle mealy notes and a hint of struck match complexity.
  • Palate: A modern and well-balanced style, with zesty citrus and luscious stone fruit flavours. The new oak contributes a gentle spice, enhancing the wine’s texture and depth.
  • Finish: A long and satisfying finish that showcases the wine’s elegant structure, with a bright and refreshing aftertaste.

Food Pairing Suggestions

  • Poultry Dishes: Pairs beautifully with roasted or grilled chicken, especially with rich, herb-infused sauces.
  • Creamy Shellfish: Complements dishes like creamy seafood pasta or lobster bisque, where the wine’s acidity balances the richness.
  • Sautéed Vegetables: Perfect with sautéed or roasted vegetables, especially those with a slightly caramelized finish, such as butternut squash or asparagus.
  • Cheese: Try it with soft cheeses like Brie or Camembert, which complement the wine’s delicate texture and citrus elements.

Vineyard & Winemaking

The 2025 season offered consistent temperatures and very little rain, resulting in the chardonnay fruit displaying strong varietal character and great concentration of flavours.

The fruit was harvested in three separate parcels on 26 February, 5 March and 11 March. In each instance, the parcel of fruit was chilled overnight and then fermented in Burgundian oak barriques (approximately 25% new and 75% aged). The chardonnay barrels were lees stirred weekly for the first four months and then left to settle in barrel for a further two months before being prepared for bottling in October 2025.

  • Oak Maturation: Aged in 25% new and 75% one-year-old Burgundian oak barriques, which imparts subtle spice and richness.
  • Fermentation: Fermented in oak, which allows for a balanced integration of oak and fruit flavours.
  • Harvest: Meticulously handpicked in late March, ensuring the best quality fruit for this wine.

Technical Data

  • Grape Variety: Chardonnay
  • Region: Great Southern, Western Australia
  • Alcohol: 13.3% by Vol | 8.1 Standard Drinks
  • pH: 3.28
  • Titratable Acidity: 6.6 g/L
  • Cellaring: Will develop beautifully over the next 3-5 years.

Best Serving Temperature:

  • Ideal Serving Temperature: 10°C
Serving the wine slightly chilled enhances the fresh citrus and stone fruit flavours. If being stored in the fridge, leave out for 10 minutes prior to serving.

Technical Wine Language Explained

  • Burgundian Oak: A type of oak barrel commonly used in Burgundy, France, for aging wines. These barrels allow the wine to take on subtle oak flavours like spice and vanilla while enhancing texture.
  • Mealy Notes: A term used to describe the texture and flavour derived from the fermentation and aging process, particularly in wines that undergo malolactic fermentation. These notes can give the wine a creamy or biscuit-like character.
  • Struck Match: A subtle aroma that can develop during fermentation, typically from sulfur compounds, adding complexity and a slight smokiness to the wine.
  • Titratable Acidity: A measure of the wine’s acidity, contributing to its freshness and crispness. This wine has a well-balanced acidity that supports its fruit flavours.
  • pH: A measure of the wine’s acidity. A pH around 3.28 indicates a good balance between freshness and smoothness.

I have been buying my wines from Kirk for about two years now and I have never had a bad experience or wine. I love the fact that the wines are all West Australian, so supporting local and lower carbon footprint. He delivers when it’s convenient for me and brings the wine to my door. Wines are all good quality and well priced, especially the cleanskins. Highly recommended
