Winemaking

• Harvesting: The grapes were picked on 19th March 2025, ensuring optimal ripeness for a fresh, aromatic Rosé.
• Fermentation: After gentle destemming and a brief period of skin contact, the juice was pressed and fermented with indigenous yeast. A slow, cool fermentation preserved the wine’s delicate aromatics.
• Lees Handling: The wine was rested on its lees in stainless steel tanks for four months, adding subtle texture and complexity.
• Bottling: After maturation, the wine was prepared for bottling, retaining its freshness and vibrancy.

• Skin Contact: The process of allowing the grape skins to remain in contact with the juice for a short period, extracting flavour and colour, which gives Rosé its distinctive hue and flavour complexity.
• Indigenous Yeast: Natural yeast found on the grape skins and in the environment is used to ferment the wine, contributing to its unique complexity.
• Lees: The dead yeast cells left after fermentation. Stirring the lees gently adds texture and mouthfeel to the wine.
• Provence Style: A style of Rosé originating from the Provence region in France, known for its dry, crisp character and subtle fruit flavours.
