Tasting Notes

Pale salmon-pink in the glass with brilliant clarity. The nose opens with lifted floral notes, cranberry, and a hint of confection. The palate is soft and approachable with red berry fruit, gentle acidity, and a whisper of natural residual sugar to round out the mouthfeel.

Winemaking Notes

• Fruit Source:

  • Tempranillo (machine harvested, 22 Feb @ 12.4° Baumé)

  • Shiraz (hand-picked, 20–21 Feb @ 12.8° Baumé)

  • Small portion of puncheon-fermented Sauvignon Blanc

• Fermentation:

  • Free-run juice

  • Wild ferment in stainless steel

  • Overseeded with Paradisi yeast

  • Ferment chilled to retain 3.5g/L natural residual sugar

• Production: 287 cases

Food Pairing 

• Grilled prawns with chilli and lime

• Prosciutto and melon

• Vietnamese rice paper rolls
