Peos EstateFour Jacks Cabernet Sauvignon
The 2020 Peos Four Jacks Cabernet Sauvignon has a beautiful dark purple colour.
On the nose there is a number of black berries present, a hint of black cherry as well. It has that typical good WA Cabernet smell. It’s a medium bodied, easy drinking Cabernet. Plenty of blackcurrant and plums supported by soft tannins.
Winemaking:
The grapes were machine harvested then destemmed/crushed into fermenters where it was cold soaked to extract and retain desirable varietal flavours and aromas. When actively fermenting post inoculation they were pumped over with aeration twice a day, temperature was held around 25°C to prevent over extraction of tannins.
