Evans & Tate Breathing Space Cabernet: Margaret River has long been celebrated for its exceptional Cabernet Sauvignon, thanks to its perfect combination of climate and soil. The region’s unique conditions allow Cabernet to fully ripen, developing rich flavours and complex aromas. Over the years, Margaret River Cabernet Sauvignons have earned a reputation for their balance, depth, and remarkable value, making them a go-to choice for both casual drinkers and serious enthusiasts alike. The 2019 vintage stands out with its deep, purple-red colour and a nose that captures the essence of Cabernet Sauvignon—blackberry, blueberry, and a touch of olive, all lifted by a fresh, leafy note. On the palate, this wine is a delightful expression of the varietal, showcasing a fully ripe and juicy character with classic blackcurrant flavours. Subtle hints of bay leaf and chocolate add layers of complexity, while a firm core of chalky tannins and oak provides structure. A mineral graphite nuance completes the experience, offering a long, elegant finish.
Henty View The Dress Circle Cabernet: In the glass, “The Dress Circle” Cabernet Sauvignon displays a deep garnet or ruby-red color, enticing you with its visual allure. On the nose, it reveals captivating aromas of blackcurrant, ripe plum, and dark cherry, accompanied by subtle herbal and spicy notes. On the palate, this Cabernet Sauvignon delivers a full-bodied and well-structured experience. The rich dark fruit flavours are beautifully balanced by integrated tannins, showcasing the wine’s elegance and depth. Notes of blackberry, cassis, and hints of chocolate unfold on the palate, leading to a long and satisfying finish.
Xanadu Vinework Cabernet Sauvignon: The Vinework Cabernet is beautifully complimented with 6% Petit Verdot and 5% Malbec. This full-bodied Cabernet displays rich blackcurrant, mulberries and dark chocolate characters. A generous and structured wine with pristine fruit, seamlessly framed by fine French oak.
Duke’s Vineyard Single Vineyard Cabernet: Situated in the Porongurups of Western Australia, Duke’s is known for its dedication to producing wines that reflect both the distinctive characteristics of their region and the impact of each vintage. The 2022 Cabernet Sauvignon is a testament to the vineyard’s expertise, showcasing the unique interplay between a scorching summer and a cool, extended season to achieve optimal tannin ripeness and flavour development. The wine presents a rich, dark ruby red colour with dark cherry edges, hinting at its depth and complexity. The nose is an intricate bouquet of red currant, cassis, dark chocolate, salted caramel, and dark earth, with additional notes of forest floor, fresh herbs, violets, raspberry cane, and red rose petal. This Cabernet Sauvignon pairs excellently with robust dishes. It’s a great match for grilled steaks, slow-cooked lamb, or hearty beef casseroles. It also complements aged cheeses and rich, meaty pasta dishes
Myattsfield Cabernet Blend: The Myattsfield Cabernet Blend of 2021 is a masterful combination of Cabernet Sauvignon, Merlot, and a touch of Cabernet Franc. The Cabernet Sauvignon (47%) imparts rich dark fruit flavours, while Petit Verdot (44%) provides the structural backbone with chalky tannins and depth. Merlot (9%) adds a layer of elegance to the mid-palate. This blend is a testament to Myattsfield’s philosophy of blending, showcasing a harmonious interplay of flavours and structure. The fruit for this blend is sourced from the Perth Hills and Manjimup wine regions in Western Australia.
