Tasting Notes

Aromatics: Concentrated mulberries, boysenberries and black pastille with fennel frond, lifted violets, black cardamom and nutmeg.
Palate: Dark cherries, plums and raspberries layered through the mid-palate. Integrated dark chocolate tannins and a hint of anise, all carried by an elegant, buoyant acid line.
Finish: Long, clean and fresh with spice and dark fruit lingering.

Viticulture & Winemaking

• Region: Margaret River, Western Australia
• Varietal: 99% Shiraz, 1% Malbec
• Vinification: Parcels individually berry sorted, cold soaked, then fermented in closed and open fermenters with daily plunging and pump overs
• Maturation: 14 months in barrel (228L and 600L formats), including new plus one and two-year-old barrels
• MLF: In barrel
• Fining / Filtration: Egg white fining, sterile filtered
• Alcohol: 14.5%
• Bottled: 18 to 20 November 2025
• Release: March 2026

Serving & Cellaring

• Serve: 16 to 18°C
• Decant: 30 to 60 minutes will open the aromatics and smooth the tannins
• Cellar: Excellent now, or cellar 5 to 8 years for added savoury complexity

• Chargrilled lamb cutlets with rosemary
• Pepper crusted steak
• BBQ sausages with caramelised onion
• Mushroom ragu and pappardelle
