The bouquet is bright and fresh, with evocative hints of oregano, sage, and light vanillin cocoa, wreathed in a soft waft of tobacco leaf and fennel seed. On the palate, a rasp of loganberry and dark cherry fuse neatly with notes of Italian herb and gentle forest bramble.

Food Pairing: Venison burgers topped with melted roquefort
Mataro grapes from Frankland River, de-stemmed and crushed to an open fermenter. Following fermentation and completion of malolactic fermentation, the wine was transferred to a combination of new and seasoned French oak barrels (20% new). The oak and fruit were in perfect harmony after 8 months in that oak; thus the wine was bottled early to retain freshness of fruit.
