Viticulture & Winemaking

🔹 Region: Wilyabrup, Margaret River, WA

🔹 Variety: 100% Shiraz

🔹 Harvest: Hand-picked on 21st March 2021

🔹 Fermentation:
✔ Crushed into open fermenters for full flavour extraction.
✔ Co-inoculated with selected yeast & malolactic bacteria.
✔ 12 days of gentle plunging & pump-overs.

🔹 Aging:
✔ 12 months in French oak hogsheads (20% new, 80% seasoned).
✔ Racked & returned to barrel for enhanced integration.

🔹 Alcohol: 14.1% | pH: 3.55 | T/A: 5.9g/L
