Wine Companion – 95 Points

The grenache component comes from Swan Valley, the shiraz and mourvèdre from Perth Hills. The wine was matured in ceramic egg and oak barrels. It’s a slinky, fine-boned yet full-flavoured red wine with loads of perfume and a swish of elegant, resolved and ferrous-minerally tannin. Violets, faint game meat, black cherry and dried herbs all feature, the wine harmonious, refreshing and very pure in its execution. Wonderful wine”

Tasting Notes 🍷

Appearance
🔹A deep, captivating colour, indicative of the wine’s depth and complexity. This rich colour suggests a wine with concentrated flavours and maturity.

Aroma
🔹Rich, fragrant aromas of dark red fruits (like blackberry and plum), with a lifted and vibrant quality. Subtle oak nuances (think of a hint of woodsy or spicy smells) intertwine with the spiciness of Mourvèdre and hints of dried herbs, creating a captivating bouquet.

Palate
🔹Medium-bodied with a balanced combination of dark red fruits (a bit juicy, a bit ripe) and spice. The Grenache grape provides fresh fruitiness, while Shiraz adds depth and structure. The Mourvèdre grape gives the wine its distinctive spiciness, with oak adding just enough support, like a gentle background note. The wine finishes with a harmonious blend of fruit, spice, and elegance.

FAQ Wine Terms 🤔

❓GSM Blend (Grenache, Shiraz, Mourvèdre): This refers to a wine made from three different grape varieties—Grenache (a fruit-forward grape), Shiraz (known for its bold, rich flavours), and Mourvèdre (which adds spice and structure). Together, they create a well-balanced, complex wine.

❓Oak Barrel Fermentation: This technique involves fermenting or aging wine in oak barrels rather than stainless steel tanks. Oak can influence the wine by adding flavours (such as vanilla, spice, or a woodsy quality) and creating a smoother texture, while also helping the wine age gracefully.

❓Ceramic Egg Fermentation: This is a newer method where the wine ferments in ceramic egg-shaped vessels. The egg shape encourages natural movement of the wine during fermentation, which helps with flavour development and can enhance the smooth texture and mineral character.

❓Medium-Bodied: This describes a wine that is not too light or too heavy—it has enough substance to be satisfying without being overwhelming.

❓Tannins: These come from the grape skins, seeds, and stems, and are responsible for a wine’s drying sensation or grip. The tannins in this wine are smooth and refined, meaning they don’t overpower the taste but still provide a bit of structure and mouthfeel.

❓ Finish: This refers to how long the taste of the wine lingers after you’ve swallowed it. A long finish means the flavours stay in your mouth for a while, giving you more time to appreciate the wine’s complexity.

Best Serving Temperature:

For optimal flavour, serve this wine slightly chilled, between 16-18°C. This allows the wine’s fruit and spice notes to fully express themselves without being too cold or too warm, preserving the freshness and complexity.

Food Pairing Suggestions

  • Grilled Meats: Ideal with lamb, beef, or barbecued meats, bringing out the wine’s bold character.
  • Mediterranean Cuisine: Pairs wonderfully with roasted vegetables, herb-infused stews, or pizza topped with fresh herbs.
  • Pasta: Enjoy with a hearty pasta dish, especially those with a rich tomato-based sauce.

Vineyard & Winemaking

Vineyard
The Perth Hills Wine Region, stretching from Chittering to Jarrahdale, is renowned for its boutique varietals and unique terroir. The region’s influences, including a mix of warm days and cooler nights, help preserve acidity and promote complex flavour development in the grapes.

Winemaking
A combination of oak barrel and ceramic egg fermentation enhances the wine’s complexity, allowing the natural character of the grapes to shine. This technique highlights the fruit-forward profile of the Grenache while adding subtle layers of spice from the Mourvèdre.
