Oakover Cabernet Sauvignon 2021
Harvested with machines, the grapes were destemmed prior to being moved to static fermenters for 14 days where a cool fermentation of 28 degrees was implemented. Subsequently, a gentle pressing was achieved and the wine was aged for 18 months in both new and pre-seasoned French oak barrels.
The 2021 vintage is 100% Cabernet Sauvignon, mainly from the Blackwood River of Western Australia.
Presents a ruby red hue in glass, with a bouquet of bay leaf and herbaceous nuances. Its medium body and soft, chalky tannins render it dry on the palate with aromas of bright red and blue fruits.
