Vinification

The Peccavi Cabernet Sauvignon is crafted from 100% Cabernet Sauvignon, sourced from equal parts of Bordeaux clones 191 and 337. The fruit is exclusively Estate-grown in the Margaret River vineyard, and produced by Bruce Dukes (Domaine Naturaliste) using the finest winemaking practices to ensure the highest quality expression of this iconic variety.

Tasting Notes

The 2021 vintage has a medium-deep ruby colour. The nose offers aromas of black cherry, cassis, and blackcurrant, complemented by savoury notes of black olives, tobacco leaves, and spice box, with a touch of mint. On the palate, this full-bodied Cabernet Sauvignon presents supple, juicy dark fruit flavours, underscored by undertones of parma violet and subtle, smoky vanilla notes. The fine graphite tannins are well-integrated, leading to a long, intense finish.

This Cabernet Sauvignon pairs beautifully with rich, savoury dishes such as roast lamb, grilled steak, or chargrilled vegetables. It also complements strong cheeses like aged cheddar or blue cheese.
