Tasting Notes:

The Rockcliffe ZiNo Chilled Red 2022 pours a bright ruby colour, setting the stage for a lively tasting experience. The nose bursts with delightful aromas of cherry candy and black pepper spice, immediately drawing you in. On the palate, it’s a juicy fiesta of red fruits like raspberries, complemented by earthy vanillin and plummy notes that add complexity. The wine is light to medium-bodied with a refreshingly dry finish, balanced by soft tannins that make it smooth and easy to drink.

Food Pairing Suggestions:

  • Salads: Perfect with fresh, vibrant salads, the ZiNo complements the crisp, green flavours beautifully.
  • Grilled Chicken: A fantastic match for grilled chicken, where the wine’s fruity freshness balances the smokiness of the meat.
  • Charcuterie: This Shiraz is also great with a cheeky charcuterie platter, pairing perfectly with a variety of cured meats and cheeses.
  • Light Pasta Dishes: Try it with pasta dishes like a simple spaghetti aglio e olio or a fresh tomato-based pasta.

Best Serving Temp:

Serve the Rockcliffe ZiNo Chilled Red 2022 chilled, around 8-10°C, to showcase its fresh and fruity character.

  • If storing at room temperature (22°C): Chill the bottle for about 90 minutes before serving.
  • If storing in the fridge (5°C): Remove the bottle 10 minutes before serving to bring it to the ideal temperature.

Technical Terms Explained:

  • Burgundian Nouveau Style: A style of winemaking that aims to produce a fresh, fruity wine that’s meant to be consumed young and served slightly chilled. This style is often light-bodied and expressive of the grape’s pure fruit flavours.
  • Fruit-Forward: A term used to describe wines where the fruit flavours (like berries, citrus, or stone fruits) are the dominant characteristics, offering a vibrant and juicy profile.
  • Tannins: Natural compounds found in grape skins, seeds, and stems that provide structure and texture to wine. In this case, the ZiNo has soft tannins, contributing to its smooth and approachable finish.

But our commitment to sustainability doesn’t stop there. Despite the convenience of having Denmark mains water just 40 metres away, we’ve opted for complete self-sufficiency in water usage. We utilise filtered dam water for irrigation and cleaning purposes, while filtered rainwater – predominantly collected from our roofs – is used to rinse anything that comes into contact with our wine, including pipes and tanks, as well as for drinking water.

Our overarching goal is to operate at the highest environmental standards possible. We’re dedicated to being as sustainable as we can, ensuring that every step of our winemaking process reflects our commitment to both quality and environmental responsibility.
