Thompson Estate Cabernet Sauvignon

The 2019 Thompson Estate Cabernet Sauvignon is a captivating expression of this Margaret River favourite. The nose is generous and inviting, featuring a delightful blend of lifted forest berry fruits, rich cassis, and luscious dark cherry fragrances. This highly scented Cabernet showcases blackcurrant and leafy dark plum, with some minerality that adds intriguing complexity. Subtle notes of black olive, sweet cinnamon oak spice, violets, and savoury dried herbs further enhance the aromatic profile, making each sniff a rewarding experience.

On the palate, this medium to full-bodied wine offers a refined and elegant experience. Well-integrated red berry flavours fill the mouth, while the texture remains succulent and fleshy. The palate is tightly held, with an angular thread of tannins and tight, fine-grained oak that contributes to a structured and regal character. Juicy red berry flavours persist endlessly, leading to a finish enriched by hints of dark chocolate and mocha. This Cabernet showcases a classic, supple, and silky quality, allowing the vibrant red fruits to shine against the expertly crafted oak. The oak provides essential structure while also introducing a certain rigidity, letting the waves of flavour crash against it beautifully. The acidity is seamlessly woven into the fruit profile, creating a harmonious balance that feels almost ethereal.

When it comes to food pairings, this Cabernet Sauvignon is a versatile companion that enhances a wide range of dishes. Its bold character pairs wonderfully with grilled meats, such as a perfectly cooked ribeye or lamb chops, where the wine’s tannins and fruitiness complement the rich flavours beautifully. For a vegetarian option, consider a hearty mushroom risotto or roasted vegetables drizzled with balsamic reduction, both of which harmonise splendidly with the wine’s depth.
