Volo Single Vineyard Cabernet
Volo Wines is the creation of Binh, an accomplished winemaker based in Dunsborough. With a diploma from Toulouse, France, and the Diplôme National d’Oenologue obtained in 2016, Binh has cultivated extensive experience across various wine regions, including the USA and New Zealand. Since 2018, he has worked at Flametree Wines (Located between Busselton & Dunsborough) while passionately pursuing his own label, VOLO Wines, which he launched in 2020.
The 2020 Volo Cabernet Sauvignon is crafted from hand-harvested fruit sourced from the esteemed Wilyabrup area in Margaret River. This small parcel was harvested from Ironstone Vineyard, which is characterised by its east/north-east facing, gravelly landscape. The bony surface soils, combined with gravel and quartz sub-soils, provide ideal conditions for growing high-quality Cabernet grapes. The vintage benefitted from a warm spring and fine, dry summer, leading to low yields and exceptional fruit quality.
In the glass, the wine presents a deep, inviting colour that hints at its richness. The nose is lifted and aromatic, revealing an enticing bouquet of berry fruits, including blackberry, cassis, and ripe plum, with nuanced notes of liquorice and cedar. This aromatic complexity draws you in and sets the stage for the tasting experience.
On the palate, the 2020 Volo Cabernet Sauvignon is medium-bodied and elegant, showcasing fine-grained tannins that provide structure without overpowering the fruit. Flavours of dark berries and plum lead into a long, lingering finish, complemented by soft and sweet tannins. This vintage is enjoyable now but also has the potential to mature beautifully over the next 8-10 years, offering a rewarding experience for those who choose to cellar it.
