  • Asian Dishes: Its freshness also makes it an excellent companion for light Asian dishes like sushi or Thai spring rolls.

Vineyard & Winemaking:

The 2023 growing season in the Great Southern was dry, leading to one of the earliest harvests on record. The lack of rainfall resulted in reduced yields, but the fruit quality was exceptional, with excellent flavour concentration. The grapes were handpicked early in the morning to retain freshness, then gently pressed. The wine underwent fermentation in stainless steel to preserve the purity and finesse of the Riesling fruit, while also maintaining freshness and vibrancy.

Oak Maturation: None – fermented and matured entirely in stainless steel to preserve the wine’s bright, fresh character.
Fermentation: Slow fermentation at low temperatures, preserving the natural aromatics and enhancing the freshness of the fruit.
Harvest: Hand-harvested early in the morning to capture the purest fruit expression, ensuring the wine’s vibrant flavours.

Vintage Conditions:
The 2023 vintage saw ideal growing conditions in the Great Southern, with a dry winter and very cold spring followed by warm summer days. These conditions led to slow ripening, which helped preserve the natural acidity of the Riesling grapes, creating a wine that’s balanced, fresh, and full of flavour.

Best Serving Temperature:
Ideal Serving Temperature: 8-10°C (46-50°F)
Serving this Riesling slightly chilled will highlight its refreshing citrus notes and bright acidity.

Technical Wine Language Explained:

  • Linear acidity: Refers to the crisp, clean line of acidity that runs through the wine, providing freshness and balance.
  • Finesse: The elegance and balance of the wine, where the elements of fruit, acidity, and texture are perfectly integrated.
  • Stainless steel ferment: Fermentation that occurs in stainless steel tanks to preserve the fresh, vibrant qualities of the fruit, avoiding any influence from oak.
  • Titratable acidity: A measure of the wine’s acidity, contributing to its freshness and balance.
