The Forest Hill 2021 Block 5 Cabernet Sauvignon showcases the remarkable qualities of its 1975-planted, dry-grown vines. This vintage presents a complex bouquet of blackcurrant, black olives, bay leaf, cloves, and delicate floral spices. On the palate, it delivers a tightly wound, medium- to fuller-weight profile brimming with cassis, blackcurrant, woody spices, and hints of liquorice. The evocative perfume introduces the dark fruit and toasty clove spice, while the flavour profile follows suit with a seamless integration of fine, lacy tannins, brambly herbs, and lingering spices.

Crafted with care, the grapes were hand-picked and subjected to a cold soak before fermentation, with the must aerated through pump-overs or hand plunging. Ageing for 15 months in French oak hogsheads—25% of which were new—refines the wine, enhancing its elegance and finesse. The result is a graceful, reserved wine with excellent persistence of flavour and a nearly refreshing feel.

The 2021 growing season began with a dry winter, followed by a wet spring that set up the vines beautifully for summer. Despite some early frost, the overall conditions were favourable, and the La Niña pattern brought beneficial rainfall in February, refreshing the canopies without causing harm. Warm March days and cool nights provided the perfect environment for the red varietals, culminating in a wine that reflects its terroir with an impressive sense of class and elegance.

Produced from 1975-planted dry-grown vines. Tightly wound, medium- to fuller-weight cabernet with cassis, blackcurrant, woody spices, black olive and licorice characters in spades. Evocative perfume delivers all that dark fruit, toasty, clove spice, leafy herb and anise personality, an appealing intro to the similarly set flavours and the accompanying roll of fine, lacy, succulent tannins and brambly herb and spice lingering on. Very even, graceful flow, reserved and elegant in its course with excellent persistence of flavour and a general sense of finesse. An almost refreshing feel overall, too. Very classy.
