Tasting Notes:

The Rockcliffe Single Site Pinot Noir presents a beautiful garnet colour with a bronze rim. The nose opens with a bouquet of bramble fruits, fresh cherry, and raspberry, complemented by savoury notes of game meat, forest floor, and dried herbs. On the palate, the wine delivers a textured, silky mouthfeel with a transition from savoury earthiness to flavours of plums and cherries. Subtle tannin grip adds structure, while a refreshing finish of pomegranate juice adds depth, making this wine beautifully balanced and complex.

Food Pairing Suggestions:

  • Roasted Game Meat: The savoury notes in this Pinot Noir make it a perfect match for game meats like roasted duck, venison, or pheasant.
  • Mushroom Dishes: The earthy character of the wine pairs wonderfully with mushroom-based dishes, such as a rich mushroom risotto or roasted wild mushrooms.
  • Charcuterie: A platter of charcuterie with aged cheeses will complement the wine’s complexity and soft tannins.
  • Grilled Salmon: This Pinot Noir’s balance of fruit and earthy flavours makes it an excellent choice to pair with grilled or seared salmon.

Best Serving Temp:

Serve the Rockcliffe Single Site Pinot Noir at 14-16°C to bring out the wine’s subtle nuances and textured mouthfeel.

  • If storing at room temperature (22°C): Chill the bottle for 30 minutes before serving.

Technical Terms Explained:

  • Whole-Bunch Fermentation: A technique where the whole bunches of grapes are fermented, rather than just the crushed fruit. This method can enhance the wine’s aromatic complexity and texture.
  • French Oak: Oak barrels from France that impart subtle flavours and a smooth texture to the wine, adding layers of complexity during the aging process.
  • Tannin Grip: The sensation of tannins, which are natural compounds in grapes that contribute to the structure and texture of the wine.
  • Pomegranate Juice Finish: A clean, refreshing note on the finish that provides a tangy contrast to the wine’s rich fruit and earthiness.

But our commitment to sustainability doesn’t stop there. Despite the convenience of having Denmark mains water just 40 metres away, we’ve opted for complete self-sufficiency in water usage. We utilise filtered dam water for irrigation and cleaning purposes, while filtered rainwater – predominantly collected from our roofs – is used to rinse anything that comes into contact with our wine, including pipes and tanks, as well as for drinking water.

Our overarching goal is to operate at the highest environmental standards possible. We’re dedicated to being as sustainable as we can, ensuring that every step of our winemaking process reflects our commitment to both quality and environmental responsibility.
