Vineyard and Winemaking Process

Sourced from Deep Woods Estate: The grapes for this wine come from the estate’s carefully managed vineyards, where the warm autumn weather allows for the late harvest of Riesling, leading to concentrated flavours and a delicate balance between sweetness and acidity.

Winemaking Details:
The grapes were left to ripen on the vine for longer than usual, allowing the sugars to develop naturally, resulting in the wine’s signature sweetness and lower alcohol content. After harvest, the fruit was gently pressed, and fermentation took place in stainless steel to preserve the fresh, fruity character. The wine spent a brief period on lees, which adds to the texture and mouthfeel.

Wine & Food Pairing Recommendations

  • Main Courses: Thai food, spicy curries, or dishes with aromatic herbs and ginger.
  • Brunch Dishes: Light brunch options like smoked salmon, eggs benedict, or fresh fruit salads.
  • Cheese Pairings: Soft cheeses such as goat cheese, brie, or camembert.
Seasonal Pairing: A perfect wine for spring and summer gatherings, as well as casual occasions like picnics or light lunches.

Serving Temperature Tips

To enjoy the aromas and vibrant fruit character, serve the Deep Woods Autumn Harvest chilled at 8-10°C. This temperature allows the balance of sweetness and acidity to shine, making it the perfect companion for spicy dishes or a relaxed brunch.

Technical Terms Explained:

  • Residual Sugar: The natural sugar left in the wine after fermentation, contributing to the wine’s sweetness. This balance with acidity creates a harmonious mouthfeel.
  • Acidity: A key element in wine that provides freshness and balance. The crisp acidity in this Riesling helps cut through the sweetness, keeping the wine refreshing.
  • Lees: The sediment left behind after fermentation, often made up of dead yeast cells. Aging on lees can add texture and complexity to the wine.
  • Meyer Lemon: A sweeter, less acidic lemon variety with a hint of orange, contributing to the aromatic profile of the wine.
