Domaine Naturaliste Rebus Cabernet
Domaine Naturaliste’s Rebus Cabernet Sauvignon is a true reflection of the Margaret River region, delivering a wine that balances tradition with modern winemaking finesse. Since its first release in 2012, Rebus has become a favourite among wine lovers across Australia, offering a complex yet approachable expression of Cabernet Sauvignon. The 2022 vintage showcases a beautiful array of aromas, starting with glazed cherries, violets, and graphite. These lift to reveal a palate rich with flavours of red currants, cacao nibs, and plum skin, offering a seamless balance of fruit and subtle spice. On entry, the wine presents bristling tannins, which evolve into a core of liquorice, blackberries, and slate. The finish is long, persistent, and mineral, continually changing with each sip.
Growing Season
The 2022-2023 growing season in Margaret River was exceptional, with gentle, sun-drenched days providing the ideal conditions for fruit that was aromatic, fresh, and beautifully balanced. The resulting grapes exhibited natural acidity and ultra-fine tannins — hallmarks of a standout vintage.
Winemaking Process
The fruit for Rebus was carefully fermented and matured separately. After 12 months in oak, 40% of which was new French barriques, the wine was blended to achieve the ideal balance of fruit and structure. The oak influence, sourced primarily from the Allier and Centre of France, adds complexity without overwhelming the fruit character.
Cellaring Potential
While Rebus is drinking beautifully now, it has the structure and depth to age gracefully for up to 10 years. Over time, the wine will continue to develop, evolving into a more complex and nuanced expression of Cabernet Sauvignon.
