100% Wilyabrup cabernet sauvignon. Pressed straight to large-format 100% new 500L puncheons and rolled on custom racks to enable the removal of skins. Wild fermented and matured for 20 months in the same vessel. The cooler vintage has birthed herbal wines of complexity – of which this is both. The tannins are omnipresent and fine; the fruit is delicate and lingering. This is not the powerhouse one would expect from a flagship wine: it is nuanced and fragrant and all the better for it.

This wine reflects the dedication and meticulous craftsmanship of Fraser Gallop Estate, showcasing the unique terroir of the region. The 2017 Palladian is beautifully aromatic, with dark cherries and a subtle hint of plush leather. This vintage is slightly fuller-bodied, with rich, soft fruits of boysenberries and blackcurrants unfolding on the palate. The texture is seductively smooth, with velvety tannins that lend to its luxurious mouthfeel. The wine’s finish is impossibly long, leaving a lasting impression of complexity and depth.

The remarkable balance and seamless integration of fruit, oak, and tannins make this a wine built for ageing. It will continue to develop beautifully with time, offering a wine-drinking experience that will evolve and reward those who choose to cellar it.

Winemaking Process 🍷

Hand-picked at optimal ripeness, the Cabernet Sauvignon grapes were carefully selected from Fraser Gallop Estate’s premium vineyards. The fruit underwent fermentation in small batches to preserve its purity and intensity. After fermentation, the wine was matured in a combination of French oak barriques and puncheons, ensuring a well-integrated oak influence that complements the fruit without overwhelming it. The wine was then allowed to rest, allowing the tannins to soften and the flavours to develop further.

Cellaring Potential

The 2017 Palladian Cabernet is a wine with exceptional ageing potential. While it is already drinking beautifully, it will continue to evolve over the next 10 years, becoming even more complex and refined as it matures.

The vineyard of Fraser Gallop Estate features undulating topography and gravelly laterite loams over clay subsoil providing superb conditions in order to grow Bordeaux and Burgundy grape varieties. The unique location, geography and climate conditions combine to imbue the colour, flavours and aromas found only in a Fraser Gallop Wine.

Our winery, designed by our winemaker and purpose-built in 2008, has a 300-tonne capacity. It is specifically designed in layout and size for the fermentation of Cabernet Sauvignon, Chardonnay and Semillon Sauvignon Blanc blends.

Through minimal intervention, harnessing naturally occurring environmental yeasts, and employing a blend of traditional techniques and modern winemaking skills, we strive to create wines that exhibit balance and finesse upon release while possessing the structure and pedigree to flourish with careful cellaring.

Our Cabernet Sauvignon and Semillon Sauvignon Blanc wines develop their flavour, texture, and complexity in the finest quality French oak barrels sourced from renowned Bordelais cooperages for the Cabernet Sauvignon and Semillon Sauvignon Blanc blends, and Burgundian cooperages for the Chardonnay.
