Wild strawberry | Creamy texture |

L.A.S. Vino Albino PNO 2025 is one of Australia’s most distinctive rosé-style wines. Made from 90% Pinot Noir and 10% Chardonnay, it is pale, textural, savoury and beautifully complex. It has built a cult following because it tastes like a proper wine: layered, dry, textural and full of personality. Expect wild strawberry, cranberry, red apple, citrus peel, pear skin, soft creaminess, sea spray and fine savoury grip. It is refreshing, but there is real flavour and shape behind it.

The 2025 vintage is especially exciting. L.A.S. Vino used yeasts sourced from native Australian flowers to start portions of the barrel fermentations, including red-flowering gum and Rottnest Island tea tree. It is experimental, tiny-production and very much in the spirit of L.A.S. Vino.

Tasting Notes

Colour: Pale copper-pink with a light golden edge.

Aromatics: Wild strawberry, cranberry and red apple, with citrus peel, pear skin, soft florals, sea spray and a gentle savoury note.

Palate: Dry, layered and textural. Pinot Noir brings red fruit, savoury spice and fine phenolic shape, while Chardonnay adds texture, citrus lift and a soft creamy line through the middle.

Finish: Refreshing and savoury, with lingering red fruit, citrus, sea spray and fine grip.

About the Wine

Albino PNO is a wine that refuses to sit neatly in one box. It looks like rosé, but it has the texture and complexity of a serious table wine.

The fruit comes from one of Margaret River’s oldest remaining Pinot Noir vineyards, planted in Wilyabrup in 1980. The site sits near the Willyabrup River, only kilometres from the Indian Ocean, where cool breezes move through the valley and help preserve freshness.

For the 2025 vintage, L.A.S. Vino took the experimentation even further. One barrel was fermented using yeasts from the red flowers of the Australian red-flowering gum, another with yeasts from white flowers of Rottnest Island tea tree, with other portions fermented naturally, in clay and in oak. Each parcel adds a different layer of flavour, texture and complexity.

Serving and Cellaring

Serve: 8 to 10°C

Serve chilled, but not ice cold. A little warmth in the glass helps the texture, red fruit and savoury complexity show properly.

Decant: Not essential, but this is one of those rosé-style wines that benefits from a few minutes in the glass.

Cellaring: Delicious now for its freshness and texture, or drink over the next three to five years as more savoury and nutty complexity develops.

Food Pairing

  • Fresh prawns, crab or scallops
  • Charcuterie, pâté and soft cheeses
  • Roast chicken with herbs and lemon
  • Seared salmon or tuna
  • Pork with apple and fennel
  • Mushroom dishes and truffle pasta
  • Vietnamese salads or rice paper rolls
  • Brie, Comté or washed-rind cheese

FAQ 🧐

Is L.A.S. Vino Albino PNO a rosé?
Yes, but it is a very serious and textural style of rosé. It is dry, savoury and complex rather than simple and fruity.

What does Albino PNO mean?
It refers to a pale Pinot-based wine. This 2025 release is made from Pinot Noir with a small portion of Chardonnay.

Is it sweet?
No. Albino PNO is dry. It has fruit flavour and texture, but the finish is savoury and refreshing.

What makes the 2025 vintage different?
The 2025 vintage uses yeasts sourced from native Australian flowers for portions of the fermentation, including red-flowering gum and Rottnest Island tea tree.

Is it like a normal rosé?
No. It has more texture, savoury detail and complexity than a typical easy-drinking rosé. It is closer to a serious table wine that happens to be pale and refreshing.

Can I cellar it?
Yes. It is excellent now, but the texture, acidity and winemaking detail should allow it to develop more savoury complexity over the next few years.
