Peaceful Bay Sauvignon Blanc 2023

Rockcliffe Peaceful Bay Sauvignon Blanc

At Rockcliffe Winery, the Peaceful Bay Sauvignon Blanc is crafted with meticulous care to ensure the preservation of the fruit’s purity and vibrancy. Using modern winemaking techniques, the grapes are carefully selected and handled to maintain their fresh characteristics. Fermentation at cool temperatures enhances the wine’s aromatic qualities while preserving its crispness. The result is a Sauvignon Blanc that embodies the bright, fruit-forward style of the variety, offering a delightful and refreshing experience.

In the glass, the Peaceful Bay Sauvignon Blanc shows off a vibrant, clear appearance. Its aromatic profile is lifted by enticing scents of citrus blossom and gooseberry, creating a fresh and inviting bouquet.

On the palate, this Sauvignon Blanc delivers refreshing notes of passionfruit and tropical fruit, with a subtle hint of apple adding an extra layer of complexity. The wine finishes with a crisp, herbaceous note that provides a lively and clean conclusion to the tasting experience.

Enjoy this Sauvignon Blanc with a variety of dishes, particularly those with fresh and zesty flavours. It pairs wonderfully with seafood like grilled fish or prawns, as well as salads with citrus dressings, making it a versatile choice for light, vibrant meals.

At Rockcliffe Winery, premium quality and sustainability go hand in hand – it’s at the core of everything we do! We source 100% of our energy from renewable solar power, with any excess energy carefully stored in lithium batteries.

But our commitment to sustainability doesn’t stop there. Despite the convenience of having Denmark mains water just 40 metres away, we’ve opted for complete self-sufficiency in water usage. We utilise filtered dam water for irrigation and cleaning purposes, while filtered rainwater – predominantly collected from our roofs – is used to rinse anything that comes into contact with our wine, including pipes and tanks, as well as for drinking water.

Our overarching goal is to operate at the highest environmental standards possible. We’re dedicated to being as sustainable as we can, ensuring that every step of our winemaking process reflects our commitment to both quality and environmental responsibility.
