The nose is a complex symphony of ripe blackberries, cassis, and blackcurrant, enriched with hints of cedar, tobacco, and earthy undertones. On the palate, this Cabernet Sauvignon delivers a full-bodied experience with layers of black fruit – blackberry and plum – intertwined with notes of dark chocolate, espresso, and a touch of spice. The wine is structured with firm yet velvety tannins that add elegance, while the acidity ensures balance and a long, satisfying finish.

Food Pairing Suggestions:

  • Grilled Meats: This Cabernet Sauvignon pairs beautifully with hearty grilled meats such as steak, lamb, or venison, where its rich, bold flavours can shine.
  • Braised Short Ribs: The wine’s complexity complements the deep flavours of braised meats, making it a perfect pairing for slow-cooked dishes.
  • Aged Cheeses: Try it with aged cheeses like cheddar or gouda, where the wine’s tannins and acidity will cut through the richness, enhancing both the wine and the cheese.
  • Roasted Vegetables: The depth of flavour in this wine also pairs wonderfully with roasted root vegetables or earthy dishes like mushroom risotto.

Best Serving Temp:

Serve the Rockcliffe Single Site Cabernet Sauvignon at 16-18°C to allow the wine’s complex aromas and flavours to unfold.

  • If storing at room temperature (22°C): Chill the bottle for 30 minutes before serving.

Technical Terms Explained:

  • Single Site: Refers to a wine made from grapes grown in a single vineyard or site, showcasing the unique characteristics of that location.
  • Cassis: A deep, rich fruit flavour commonly associated with blackcurrants, which contributes to the wine’s complexity.
  • Tannins: The compounds found in grape skins, seeds, and stems that give the wine structure and texture. They also contribute to a wine’s ageing potential.

But our commitment to sustainability doesn’t stop there. Despite the convenience of having Denmark mains water just 40 metres away, we’ve opted for complete self-sufficiency in water usage. We utilise filtered dam water for irrigation and cleaning purposes, while filtered rainwater – predominantly collected from our roofs – is used to rinse anything that comes into contact with our wine, including pipes and tanks, as well as for drinking water.

Our overarching goal is to operate at the highest environmental standards possible. We’re dedicated to being as sustainable as we can, ensuring that every step of our winemaking process reflects our commitment to both quality and environmental responsibility.
