The grapes were harvested on the 11th of April, gently destemmed, and cold soaked for two days to enhance flavour extraction. A portion underwent natural fermentation in new French oak, while the rest was fermented in small open fermenters before being aged in a blend of new and seasoned oak for approximately seven months. This careful approach allows the wine to develop complexity and elegance.
